Diabetic Diet Menu
Last night I added yellow rice to my diabetic diet menu, I normally use brown Bismati rice for a base on a meal but a friend had me try this Yellow Rice recipe from Emeril Lagasse.
After the kids football practice, I was in a hurry so I wanted to just throw something together in a hurry and this was the perfect time for it, So I sauteed some boneless chicken breasts, added the yellow rice and some green beans for a quick dinner.
I however made a few classic mistakes to last nights dinner and the results of adding yellow rice not very pleasant.

Adding food items to your diabetes diet menu requires a certain degree of experimentation. Normally I will take a bite or two and then take an hour before testing to see how my body will react but since I had some time constraints yesterday, I failed to do this with adverse effects.

Your white breads and pasta’s are made from mainly wheat but wheat is not white rather it is brown. During processing the wheat is bleached which gives it the white color but this has an after effect for diabetics in that it gets digested in the body and quickly tends to spike the blood glucose levels.
Whole wheat breads and pasta’s and whole grain alternatives are healthier because they tend to get absorbed slower thus do not cause quick spikes in blood glucose levels.
W hen shopping try to avoid processed and bleached products, the white breads and choose brown rice, or whole grain alternatives.
Diabetic Diet Menu – Moderation
Moderation is a crucial component for effective diabetes management and making sure your diabetic diet is working, Last night I compounded the mistake of not experimenting with another one, I loved the Rice so much that I had seconds and maybe a third because I had to clear my your sons plate. That sabotaged my diet plan in the worst possible way, my fasting blood glucose was 334 this morning and I have spent the rest of the day trying to come down from my highs.
Diabetic diet menu – Conclusions
Adding more color to your diabetes diet menu will effectively give you a leg up in your diabetes management but remember to experiment with the potential foods before adding them and Finally done be like me and moderate, try to stay away from those seconds because I am obviously paying the price for my failures. I do love the yellow rice and I wanna incorporate it into my diet so after this bout of highs, I will do it the right way next time.
